With Thanksgiving happening tomorrow, you’re probably stocking up on everything you’ll need to make a delicious dinner for your friends and family. But with all that food comes leftovers, and a good PerkStreeter knows how valuable they are! Sure, turkey sandwiches with stuffing and cranberry are standard. But what can you do with leftover mashed potatoes?
A lot, actually! I’ve rounded up some creative and delicious recipes so you can get more mileage out of this often overlooked leftover staple.
Leftover Mashed Potatoes Recipe #1: Potato Candy
This may sound a little weird, but Jennifer, our community manager, insists that it’s delicious. It’s a tradition that her grandmother makes potato candy every year, and she makes such a compelling argument I might have to try it!
Leftover Mashed Potatoes Recipe #2: Shepherd’s Pie
This was recommended by Kyle, our senior blog editor. It may be obvious to some, but it was so simple I didn’t think of it at first! This is a great hearty dinner for a cold winter’s night.
Leftover Mashed Potatoes Recipe #3: Potato and Bacon Muffins
As some of you may know, we are slightly obsessed with muffin tin recipes at the PerkStreet HQ. (We even have a company Pinterest board on the topic.) Okay, we’re very obsessed. They’re quick and easy, and you can make a lot at once to last a while. So I have one question for you: Who doesn’t love bacon and potatoes together?
Leftover Mashed Potatoes Recipe #4: Pierogies
This is one of my favorite cold weather recipes. My mom is Polish, so I’ve had the great experience of growing up in a family that cooks pretty fantastic food. In my experience, pierogies are the king of them all. Making them is a little more labor intensive than some of these recipes, but they freeze wonderfully, so you can make a bunch and have them for weeks! You can also vary the fillings. I personally love potato and cheese.
Leftover Mashed Potatoes Recipe #5: Potato Leek Soup
Soup is another hearty winter meal. It’s easy to take to work for lunch, and quick to heat up at night for dinner. Add some leeks to your potatoes, and you have a win!
